TASMANIA

When planning a recent trip to Australia, my partner Gary and I heeded the advice of some dear Australian friends and included in our trip down under a four day stay on the island of Tasmania – a somewhat isolated island with sprawling farm lands, beautiful ports, and very friendly locals.  By the end of the four days in Tasmania I told Gary that I had found our retirement destination.

We booked ourselves a room at the Henry Jones Art Hotel, which is located on Hobart’s waterfront and is Australia’s first dedicated art hotel.  Henry JonesThe Hotel is a former jam factory that was transformed by architects Morris-Nunn & Associates into a unique property where the original bones of the factory were merged with modern building and design elements.  Modern amenities built with glass, wood and metals juxtapose against the original stone of the jam factory all while providing the unique ambience of the fishing port in which it resides at the very heart of Tasmania’s capital of Hobart.

Tasmania has some of the most magnificent sprawling farmlands in the world and produces amazing food products.  At the heart of their farming, Tasmania has very strict food control rules, tight farming regulations and anti-cruelty laws.  Tasmania exports its beef around the world to those looking for flavorful meat that comes from animals that have been allowed to eat plentiful grasses, who are not injected with chemicals, and whose life and death are treated with dignity and care.  The food itself was so flavorful and distinctive in texture and flavor to the region.  The hotel, knowing that Gary and I were foodies, made sure to send us to local restaurants where tourists seldom ventured.  I would say the best food we ate on our entire vacation came from our trip to Tasmania.  One restaurant in particular, situated inside an old Victorian house turned into a restaurant by a husband and wife (the husband the chef), was the tops.  Gary had the most succulent lamb chops, while I super indulged in a bouillabaisse (the best and hottest temperature wise) I have ever had, along with a pappardelle with veal ragu (yes – even veal is free range).

How do you top an amazing hotel and some great food experiences?  For us, it was our decision to travel to a local animal zoo / rehabilitation center on a dreary mid-week day.  AnimalsWe both love animals and prefer to give money to organizations that create environments that benefit the animals and the community at large. Tasmania’s zoo is just that place.  We were beyond fortunate to be the only guests at the zoos opening given the clouds, cold and drizzle, but in turn we received a private guided tour and found ourselves surrounded by hundreds of kangaroos and wallabies that we sat on the ground and played with for hours.  We gently caressed Koala bears (which leave your hands oily and smelling of sweet eucalyptus), got to feed Tasmanian devils (which are ferociously cute), and hold exotic birds given a second chance at life despite being unable to fly.  Despite the great hotel, food and nature drives, even walks along the infamous bridges in the sky (walking bridges built in the tree tops of a national park); this was our favorite part of the trip.  I will take cuddling up to a soft warm wallaby holding onto my hand to lick it over most anything else in this world.

TasmaniaIf you are looking to slow down a bit, enjoy the sights and sounds around you, and revel in a place where industrialization has not fully enveloped the lands and people, Tasmania should be a must visit destination for you.

Now I just count how many more years of working until we can retire!

As we celebrate the holidays and are surrounded by family and friends I think many of us are reminded of how lucky we are. This season is the perfect time to pull together, enjoy each other’s company and give back at the same time. How do you do that? Consider Hearthosting a Care Package Party. It will take some organizing on you part (okay, what party doesn’t require that?) but not only will you and your guests reap the benefits – your local non-profit organization will be able to continue the charitable work they do, in large part because of your help. It really is the gift that keeps giving.

Let’s get this party started!

Supplies you’ll want to have on hand:

  • A selection of toiletries, nonperishable food items, or small gifts (see Step #1)
  • Reusable containers
  • Gift-box-themed decorations, tissue paper
  • Cardboard boxes, wrapping paper, ribbon, regular and double-stick tape
  • Gift tags & colored pens

Step 1: Check in with a local charitable organization to see what sort of items they are in need of for gift boxes. You don’t want to spend your time and resources (and those of your friends) making and packaging something that the organization can’t use – so make sure to contact them first. Organize a list of simple toiletries, nonperishable food items, or small gifts that you know is doable and make sure the charity approves.

Step 2: Assign each guest to purchase a certain item in bulk. Be specific with brands and quantity.
Step 3: As the host, you should provide the care package containers–your best bet is to choose reusable containers, like thin plastic collapsible gift boxes.You can wrap them or you and your guests can have fun decorating them with art supplies at your party!

Step 4: Before the party, set the tone with some festive holiday decor that match the care package theme. Wrap up cardboard boxes with holiday wrapping paper and ribbons. You can also transform square glass floral containers into “gift boxes” by adhering ribbon to the sides with double-stick tape. At the party, use these containers to hold your care package supplies – instant gorgeous assembly line. During the party, guests can grab a container, assemble care package, and add tissue paper for padding inside each container.

Step 5: Last, guests should then write out a gift tag with warm wishes and encouragement for each care package.

It’s really that simple. Put on some music, pour some drinks, set out some easy appetizers and have your guests roll up their sleeves. It’s amazing how a central activity – and one that’s doing good for others – can invigorate a party! I threw a party where we filled boxes with school supplies for Head Start Centers and decorated the outside of the boxes with pictures and heartfelt notes. It was incredible how diligent even the most high-powered CEO was in fulfilling this task. Everyone had an amazing time. It was hilarious to see two movie execs joust for the same red marker they needed to color their respective care packages! Having fun, sharing in a common goal, doing good – knows no social boundaries. At the end of the night we’d all had a great time and we felt fortified by the huge stacks of care packages we’d created. Favorite Kitchen Tool: A food processor. Of course I love the dishwasher and disposal unit as everything disappears!

Favorite Party: My 25th Wedding Anniversary was THE Milestone Party of our lives. We created a Hawaiian theme in our beautifully manicured garden. The weather was perfect. Food, drink and music flowed. Our children arrived from different parts of the world and allCalifornia our long time friends were present.

Favorite Travel Destination: Los Angeles is my favourite place to visit. Love the people, the food and the glamour.

Most Influential Party Planner: My mother was the most influential person in home entertaining. However, it wasn’t called “entertaining” in those days. At any given time, friends and family could arrive at our home. There was always a variety of pickled herrings, herring in cream, Danish herring, mustard herring, blintzes, perogen ready to be cooked, pickled onions, peppers and cucumbers. Fruit was always in abundance. Candy and chocolates of every description were always available. My young children knew exactly in which cupboard they were kept. You could always find tons of home baked cookies, cheeses and crackers. She was one of the first people who had potted plants in the home, I am talking about 70 years ago! Our home always had the aroma of baking.

Favorite Travel Destination: Athens Greece.  I had the opportunity as Executive Chef to run the USA House in Athens during the last Olympic games with a great team of American chefs, some of the best in the country.

Biggest Influence: They are friends and clients.  Ed Wilson, President of Fox Syndications,  Kevin Reilly, Entertainment President at Fox and Erik Sprunk, VP of Nike Global Footwear.  Each have showed me that everything that is imaginable is attainable.

  • Favorite Kitchen Tool: It’s a toss-up between my KitchenAid stand-up mixer and my Cuisinart food processor. What one can’t do, the other can!
  • Favorite Event: I didn’t do the work, so can I count my own wedding? Other than your funeral, your wedding is likely the one time in your life that all the people you truly care about are together. We had a small church wedding followed by lunch in a French restaurant with a lovely patio garden. We had a jazz violin band a la Stephane Grappelli and lots of Duvel beer and French champagne.
  • Favorite Travel Destination: London! I love its incredible history and incredible size. I feel I could wander there forever.
  • Biggest Influence in Entertaining:  I enjoy reading M.F.K. Fisher’s books. In one, she describes washing dishes in the tiny sink in her tiny Paris apartment. In a world where people who never seem to cook or entertain have kitchens with professional-grade equipment, she reminds me that wonderful food and unforgettable evenings can arise from very simple circumstances.
  • Favorite Cookbook:  One of my grandmother’s books, Sunset’s New Kitchen Cabinet Cook Book from 1938. Thanks to recipes including “Veal Pie Different,” “Friday Emergency Luncheon” and “Sunset’s Apricot Pie” it’s on my list of what to grab if the house catches fire.
