Cake

Ingredients

  • 250g dates
  • 1 teaspoon bicarbonate of soda
  • ½ teaspoon vanilla
  • 1 cup sugar
  • 1 cup boiling water
  • 1 beaten egg
  • 60g butter
  • 1 ½ cup flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 150g butter
  • 10 tablespoons treacle sugar (brown sugar)
  • 1½ cup coconut
  • 125ml cream

 Directions

  1. Sift flour, baking powder and salt.
  2. Chop dates, place in bowl and sprinkle bicarbonate of soda over.
  3. Pour 1 cup boiling water over dates and allow to soak.
  4. Cream butter and sugar.
  5. Mix in beaten egg, vanilla, sifted ingredients plus date mixture.
  6. Pour into sprayed and floured spring form pan.
  7. Bake at 180°C for 40 minutes.

For Topping

 

  1. Melt 150g butter.
  2. Add 10 tablespoons treacle sugar
  3. Add 1½ cup coconut
  4. Add 125ml cream
  5. Bring to boil and pour over the cake as it comes out the oven.
  6. Return cake to oven and very carefully toast the top of the cake to a golden color.
