Ingredients
- 250g dates
- 1 teaspoon bicarbonate of soda
- ½ teaspoon vanilla
- 1 cup sugar
- 1 cup boiling water
- 1 beaten egg
- 60g butter
- 1 ½ cup flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 150g butter
- 10 tablespoons treacle sugar (brown sugar)
- 1½ cup coconut
- 125ml cream
Directions
- Sift flour, baking powder and salt.
- Chop dates, place in bowl and sprinkle bicarbonate of soda over.
- Pour 1 cup boiling water over dates and allow to soak.
- Cream butter and sugar.
- Mix in beaten egg, vanilla, sifted ingredients plus date mixture.
- Pour into sprayed and floured spring form pan.
- Bake at 180°C for 40 minutes.
For Topping
- Melt 150g butter.
- Add 10 tablespoons treacle sugar
- Add 1½ cup coconut
- Add 125ml cream
- Bring to boil and pour over the cake as it comes out the oven.
- Return cake to oven and very carefully toast the top of the cake to a golden color.
