Potato Latke

Ingredients

  • 6 medium potatoes, grated
  • 1 small onion, grated
  • 1 small sweet potato, grated
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 teaspoon salt
  • Dash of pepper

 Directions

  1. Throw excess juice off the grated potatoes & onion. Add remaining ingredients.
  2. Drop by spoonfuls into hot oil & fry till crisp & golden.
  3. Drain well on absorbent paper.
  4. Serve with cinnamon & sugar.
