Ingredients
- 1 packet Marie Biscuits (or similar cookie) crushed through a sive
- 1 tablespoon sugar
- 120g butter, melted
- 2 teaspoons cinnamon
- 1 cup sugar
- 4 large eggs
- Pinch of salt
- 1kg of Philadelphia cream cheese – this brand only!
- 250ml cream
- 2 tablespoons flour
- 1 teaspoon vanilla extract
- 2 tablespoons lemon juice
Directions
- Mix all the above together and press onto the sides and bottom of a 23cm loose bottom tin that has been sprayed with Spray & Cook or greased with butter.
- Pat into 23cm loose-bottom pan. Refrigerate for 30 minutes.
- In an electric mixer, beat together the cheese, cream and flour until the mixture is smooth.
- In a separate bowl beat the eggs, sugar and salt until pale in color. Add the cheese mixture, as well as the lemon juice and vanilla and beat until well combined.
- Pour the filling onto the cold crust and bake at 180°C for 10 minutes.
- Reduce temperature to about 285°F and bake for 1 hour.
- Reduce temperature to about 210°F and bake for another 10 minutes.
- Do not open the oven door during the baking process.
