Philadelphia Cheese Cake

Cheese Cake

Ingredients

  • 1 packet Marie Biscuits (or similar cookie) crushed through a sive
  • 1 tablespoon sugar
  • 120g butter, melted
  • 2 teaspoons cinnamon
  • 1 cup sugar
  • 4 large eggs
  • Pinch of salt
  • 1kg of Philadelphia cream cheese – this brand only!
  • 250ml cream
  • 2 tablespoons flour
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice

 Directions

  1. Mix all the above together and press onto the sides and bottom of a 23cm loose bottom tin that has been sprayed with Spray & Cook or greased with butter.
  2. Pat into 23cm loose-bottom pan. Refrigerate for 30 minutes.
  3. In an electric mixer, beat together the cheese, cream and flour until the mixture is smooth.
  4. In a separate bowl beat the eggs, sugar and salt until pale in color. Add the cheese mixture, as well as the lemon juice and vanilla and beat until well combined.
  5. Pour the filling onto the cold crust and bake at 180°C for 10 minutes.
  6. Reduce temperature to about 285°F and bake for 1 hour.
  7. Reduce temperature to about 210°F and bake for another 10 minutes.
  8. Do not open the oven door during the baking process.
