Ingredients

  • 3 cups water
  • 6 cups sugar
  • 2 tbs lemon juice
  • 3 tbs syrup
  • 1 tbs glycerine (optional)
  • Strips of 1 lemon rind
  • 1 piece of crushed ginger
  • 4 pieces cinnamon or cassia

 Directions

  1. Make the syrup at least a day in advance. Chill.
  2. Dissolve sugar in water. Add remaining ingredients & boil for 5 minutes.
  3. Chill overnight.
  4. Make one basic bun dough recipe & leave it to rise to double its size.
  5. Roll out the dough on a floured surface until it is 1cm thick.
  6. Cut into small rectangles ( About 3 cm x 6cm ).
  7. Cut each rectangle into 3 strips & “very loosely” plait the strips joining the ends with a little beaten egg.
  8. Cover loosely with cling wrap & leave to rise for 30 minutes.
  9. Fry in deep oil over medium heat until golden.
  10. Immerse into the ice cold syrup as you remove it from the oil.
  11. Drain on cooling racks.

Hint: The glycerine will keep the koeksisters shiny longer.
