Ingredients
- 3 cups water
- 6 cups sugar
- 2 tbs lemon juice
- 3 tbs syrup
- 1 tbs glycerine (optional)
- Strips of 1 lemon rind
- 1 piece of crushed ginger
- 4 pieces cinnamon or cassia
Directions
- Make the syrup at least a day in advance. Chill.
- Dissolve sugar in water. Add remaining ingredients & boil for 5 minutes.
- Chill overnight.
- Make one basic bun dough recipe & leave it to rise to double its size.
- Roll out the dough on a floured surface until it is 1cm thick.
- Cut into small rectangles ( About 3 cm x 6cm ).
- Cut each rectangle into 3 strips & “very loosely” plait the strips joining the ends with a little beaten egg.
- Cover loosely with cling wrap & leave to rise for 30 minutes.
- Fry in deep oil over medium heat until golden.
- Immerse into the ice cold syrup as you remove it from the oil.
- Drain on cooling racks.
Hint: The glycerine will keep the koeksisters shiny longer.
