Grand Marnier Souffle

yield: (makes 6 individual servings)

Ingredients

  • ¾ cup milk
  • 3 tablespoons Maziena
  • 8 tablespoons sugar
  • 2 tablespoons butter
  • ⅓ cup Grand Marnier
  • 2 teaspoons finely grated orange zest
  • 4 eggs separated
  • 2 egg whites
  • ⅛ teaspoon salt
  • ¼ teaspoon Cream of tartar

Directions

  1. Preheat oven to 180°C. Butter 6 soufflé dishes and dust with castor sugar
  2. In a small saucepan blend the milk with the Maizena and add only 6 tablespoons sugar, place over moderate heat and stir till thickened.
  3. Remove from stove and blend in the butter and orange zest.
  4. Whisk in egg yolks one at a time.
  5. Smooth out the mixture and pour the Grand Marnier over the top so that it does not form a skin and leave to stand till ready to use
  6. In a large bowl whisk 6 egg whites till foamy.
  7. Add salt, Cream of Tartar, and remaining 2 tablespoons of sugar and beat till soft peak stage.
  8. Whisk the base mixture till the Grand Marnier is blended in
  9. Fold ¼ of beaten egg whites into egg yolk mixture.
  10. Fold this mixture into remaining egg whites using a large metal spoon with a figure of eight movement.
  11. Spoon into prepared individual soufflé dishes.
  12. Bake for about 12 minutes till set and serve immediately.
