Ingredients
- ¾ cup milk
- 3 tablespoons Maziena
- 8 tablespoons sugar
- 2 tablespoons butter
- ⅓ cup Grand Marnier
- 2 teaspoons finely grated orange zest
- 4 eggs separated
- 2 egg whites
- ⅛ teaspoon salt
- ¼ teaspoon Cream of tartar
Directions
- Preheat oven to 180°C. Butter 6 soufflé dishes and dust with castor sugar
- In a small saucepan blend the milk with the Maizena and add only 6 tablespoons sugar, place over moderate heat and stir till thickened.
- Remove from stove and blend in the butter and orange zest.
- Whisk in egg yolks one at a time.
- Smooth out the mixture and pour the Grand Marnier over the top so that it does not form a skin and leave to stand till ready to use
- In a large bowl whisk 6 egg whites till foamy.
- Add salt, Cream of Tartar, and remaining 2 tablespoons of sugar and beat till soft peak stage.
- Whisk the base mixture till the Grand Marnier is blended in
- Fold ¼ of beaten egg whites into egg yolk mixture.
- Fold this mixture into remaining egg whites using a large metal spoon with a figure of eight movement.
- Spoon into prepared individual soufflé dishes.
- Bake for about 12 minutes till set and serve immediately.
