Cheese Blintzes

Ingredients

  • 3 eggs
  • 2 1/2 cups cold water
  • 1 1/2 cups flour
  • 1/2 teaspoon baking powder
  • Pinch of salt

Directions

  1. Beat eggs & water well. Add flour, sifted with salt & baking powder.
  2. Beat till smooth.
  3. Grease pan with oil, pour thin layer of batter into pan, fry on one side only till done.
  4. Stack one on top of the other while preparing filling.

Cheese Filling:

  1. Mix 1/2lb cream cheese with 1 tablespoon cream.
  2. Flour, 1 egg, sugar to taste & dash cinnamon. Place one dessert spoon of filling in each blini.
  3. Roll up like a little parcel & fry in oil or butter. Serve with a dollop of thick cream on top, sprinkled with cinnamon & sugar.
