Ingredients
- 3 eggs
- 2 1/2 cups cold water
- 1 1/2 cups flour
- 1/2 teaspoon baking powder
- Pinch of salt
Directions
- Beat eggs & water well. Add flour, sifted with salt & baking powder.
- Beat till smooth.
- Grease pan with oil, pour thin layer of batter into pan, fry on one side only till done.
- Stack one on top of the other while preparing filling.
Cheese Filling:
- Mix 1/2lb cream cheese with 1 tablespoon cream.
- Flour, 1 egg, sugar to taste & dash cinnamon. Place one dessert spoon of filling in each blini.
- Roll up like a little parcel & fry in oil or butter. Serve with a dollop of thick cream on top, sprinkled with cinnamon & sugar.
