Brazilian Fruit Cake

Fruit Cake

Ingredients

  • Loaf pan size 33cm x 12cm x 6cm
  • 500g brazil nuts
  • 500g whole pitted dates
  • 650g glacè drained cherries
  • 3 jumbo eggs
  • ¾ cup flour
  • ¾ cup sugar
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla

Directions

  1. Mix all the fruit together. Sift dry ingredients, coating the fruit and nuts well.
  2. Beat eggs and vanilla very well and foamy. Stir into fruit and nuts.
  3. Pour into the loaf pan lined with baking paper and press into pan.
  4. Bake for 2 hours at 320°F.
  5. When baked, peel off paper whilst warm and store in air-tight container, not in fridge!
  6. Cut with a sharp serrated knife into thin slices
