Ingredients
- Loaf pan size 33cm x 12cm x 6cm
- 500g brazil nuts
- 500g whole pitted dates
- 650g glacè drained cherries
- 3 jumbo eggs
- ¾ cup flour
- ¾ cup sugar
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla
Directions
- Mix all the fruit together. Sift dry ingredients, coating the fruit and nuts well.
- Beat eggs and vanilla very well and foamy. Stir into fruit and nuts.
- Pour into the loaf pan lined with baking paper and press into pan.
- Bake for 2 hours at 320°F.
- When baked, peel off paper whilst warm and store in air-tight container, not in fridge!
- Cut with a sharp serrated knife into thin slices
